G.F. Oatmeal Cake
CAKE:
1 stick of butter
1 cup BOBS RED MILL OATS
1 1/4 cup boiling water
1 cup granulated sugar
1 cup brown sugar
2 eggs
1 1/2 cup BOBS RED MILL 1:1 Gluten Free Flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon salt
TOPPING:
4 tablespoons butter
1/2 cup evaporated milk
1 cup sugar
1 cup coconut
1 teaspoon vanilla
1/2 cup pecans, OPTIONAL
- Add butter, oats & water to a bowl. Allow to sit, covered for about 20 minutes. Or until the butter is melted and the oats have plumped. (Oatmeal consistency) 
- To the oatmeal mixture add the remining CAKE ingredients. 
- Pour into a greased 9x13 pan and bake in a 350 degree preheated oven for approximately 30 minutes. 
- Meanwhile, combine the TOPPING ingredients. Allow the cake to cool slightly, add the topping mixture and put under the broiler for about 1 minute or until the coconut starts to brown. !!!Don’t walk away. This happens fast!!!
