G.F. Spinach Muffins

2 c. Bob’s Red Mill 1:1 Gluten Free Flour

2 tsp. baking powder

1 tsp. cinnamon

1/2 tsp. baking soda

1 c. milk

1/2 c. butter, softened

1/2 c. honey or maple syrup

1 banana, over ripe for best flavor

2 c. fresh spinach

1 egg

1 1/2 tsp. vanilla extract

  1. Preheat oven to 350 degrees & prepare muffin tins.

  2. In large bowl mix your dry ingredients.

  3. Add the remaining ingredients into a blender and puree until smooth.

  4. Add the spinach mixture to the dry ingredients and stir just until incorporated.

  5. Pour into prepared muffin pan and bake at 350 degrees for about 15 minutes.

    *Remember GF baked goods need to go into the oven immediately once wet ingredients are added to dry.
