G.F. Morning Glory Muffins

Ingredients:

1 package of Bob’s Red Mill gluten free muffin mix

2 Eggs

1 cup Milk

1/4 cup Oil

1/2 cup of each of the following: shredded carrots, coconut, walnuts, diced apples (raisins, zucchini and/or pineapple would also be great substitutes)

1 teaspoon of cinnamon

Directions:

Prepare muffin mix according to directions.

Gently fold in the “add ins”.

Scoop into a muffin pan.

Bake for 20-25 minutes or until tops start to brown.
