G.F. Berry Trifle

Ingredients:

1 Bob’s Red Mill Yellow Vanilla G.F. cake mix, prepared*

3 cups whipped cream (or frozen whipped topping)

1 box of instant vanilla pudding, prepared**

1 quart of strawberries, sliced

1 pint of blueberries

*My tips to make a box mix taste homemade: The Bob’s Red Mill cake mix is delicious prepared just the way the directions advise. But I like to jazz box mixes up! Here is what I do:

-Use the 1/2 stick of butter advised & add 1/4 cup of oil

-Use milk instead of water

-Add 2 teaspoons of vanilla

For this recipe, prepare the cake in a jelly roll pan (10x15) lined with parchment paper. Bake at 350 degrees for 20-25 minutes or just until the top starts to brown. Once the cake is completely cool cut into 2 inch chunks.

**To get a nice spreadable consistency in the pudding I add an additional 3/4 cup of milk.

Now it is time to layer! You should get 3 layers, divide ingredients as necessary. Layer each ingredient as follows: cake, pudding, fruit, whipped cream. As you are layering be sure to place ingredients up against the sides. This makes for a beautiful trifle. Reserving a few berries for a garnish on the top.
