G.F. Granola Blue Pancakes

Ingredients:

1 egg

1 cup milk

2 tablespoon melted butter

1 tablespoon maple syrup

1 cup Bob’s Red Mill GF  1:1 baking flour

2 teaspoon baking powder

½ teaspoon salt

½ cup Bob’s Red Mill lemon blueberry granola

½ cup fresh or frozen blueberries

Butter or oil of choice, for cooking

Butter and maple syrup, for serving


Directions: 

  1. In a medium mixing bowl, crack the egg & whisk well. Add the milk, melted butter and maple syrup. Whisk well.

  2.  Add the flour baking powder & salt. Stir to combine. 

  3. Add granola and blueberries.

  4. On a large griddle, warm the additional butter or oil over medium heat.

  5. Scoop the pancakes onto the griddle using a ¼ cup measuring tool. 

  6. When the tops of the pancakes start to bubble (about 5 minutes) flip them and cook another 3-5 minutes.  

  7. Serve with butter and additional maple syrup.
